With a solid career dating back to 1995, our sommelier and master ham maker, Jose Molina Fernández, has accumulated valuable experience in the gastronomic industry. Starting as a waiter at a young age, his passion for service and hospitality led to his rapid promotion.

Best Waiter Award

Over the years, he has worked in various restaurants and hotels, demonstrating his dedication and exceptional skills. In 2004, he reached the position of Head of Room, standing out for his leadership and professionalism. His talent did not go unnoticed, being awarded the best young waiter in Andalusia in 2010, a recognition that underlines his excellence in the field.

Sommelier

Continuing his professional development, in 2010 he officially obtained the titles of Head of House and Sommelier, complementing his experience with outstanding job opportunities in Ireland and Belgium. His ability to analyze and improve restaurants became evident as he led numerous openings with subsequent great success.

Mastery in the art of Ham

In 2021, his passion for gastronomy led him to graduate as a ham cutter, quickly rising to the distinction of Master Ham Maker. This exceptional skill, combined with his vast experience, prepared him for his next step in the culinary world.

The culmination of a dream

Since January of this year, the manager has realized his dream of opening his own restaurant. With the aim of standing out not only for the quality of the dishes, but also for providing an exceptional experience to each customer, from the moment they walk through the door until they make their reservation. His restaurant is the manifestation of years of dedication, passion and experience, which he hopes to share with each diner who visits him.
